6 Vegetarian Recipes We Love

Whenever I come across recipes that the whole family likes, I try to keep track of them. I recently started a new Pinterest board called Repeat Recipes so I can remember which ones we liked! I thought I'd share a few of our newest favorites here too.


Are you on the spiralizer bandwagon? I just got a small one and it's ok. I should have saved up and gotten something bigger, but oh well!

I loved this Sweet & Sour Cucumber Salad by Peas & Crayons. Very fresh and light.


Again with the spiralizer, I love zucchini noodles with pesto! I saute the noodles because I prefer the flavor, and usually I skip roasting the tomatoes and just make a bruschetta-like topping with fresh tomatoes, garlic, basil and balsamic vinegar. Yum! I adore curry. I cook curry frequently. But this Pioneer Woman recipe for Chickpea Curry is seriously my favorite curry ever. My kids loved it and leftovers (I made a double batch) were even better. Super easy and really good!


Don't you just adore summer produce? We moved this summer and weren't able to put in a garden, but church members have given us lots of eggplant, zucchini and tomatoes. This Eggplant Caprese Salad from BHG is a great way to get a light meal and use up some of that produce!


Here's my other go-to recipe when we have lots of fresh produce! Ratatouille! I'll make a big batch of this to put with pasta as a potluck dish. It's fresh, healthy and inexpensive.


No one can fool me into thinking spaghetti squash=pasta. But it's a healthier alternative for when you're watching your carbs, and this Spaghetti Squash Chow Mein is a great meal.

There you go, six vegetarian summer dishes that are heavy on the veggies! Except the curry. That's just heavy on the deliciousness and you need to try it ASAP! Just eat a big cucumber salad for lunch and you'll be fine. What are some of your favorite meals lately?

Whole Foods Suppers {Day 17}

For the record, I want to share some of my new favorite recipes and ideas for menu planning. I'm not great at sticking to a set menu for a week and would rather make sure I have most ingredients on hand and pick from a list the day of, depending on what sounds good, how much time/energy I have, and what the weather is.

I've come across some really yummy meal ideas lately! For right now, we eat mostly vegan, gluten-free, and I also don't eat sugar, corn, soy or peanuts. Just so you know. We don't normally restrict our diet quite that much, but for now that's where we are.

Simple Stuffed Sweet Potatoes


We just ate this and the yummy smells are still in our house. In fact, since I found this recipe by Kelly Toups a few weeks ago we've eaten this meal every week. Simple, easy, so so good for you, and very satisfying too. Usually I do use the Greek yogurt topping but tonight I switched it up with a vegan version.


Butternut Squash Soup


This soup by Primal Palate is one on regular rotation in the fall and winter at our house. It's simple and so flavorful. I like to roast the squash whole earlier in the day. It's so much easier than peeling and chopping it! Another tip, if you're feeling generous, is to add a can of coconut milk. So good!


Spinach and Mushroom Quinoa


I tried this recipe from Julia's Album for the first time this week. Gary and I really liked it, but the boys--who love the other recipes here--aren't fans at all! I'll probably make it again because it's so easy and we always have these ingredients, but it'll be a side dish, not the main.


Indian Beans and Rice


We eat a lot of beans and rice and variations, like lentils and rice, or quinoa. No Meat Athlete has several variations if you follow the link above, and this Indian version is our favorite. So very simple, nutritious and flavorful! Sometimes I sub lentils for the garbanzos and it's also good.


Roasted Veggie and Black Bean Rice Bowl


Ok, so I haven't exactly tried this one from Back to Her Roots, but I do make something similar. I like to sauté peppers and onions, maybe a jalepeno and some mushrooms with chili powder and pile the veggies on top of rice and beans, then top it with lettuce, tomatoes and whatever other toppings you have. Always a winner!


Wild Rice Dressing


If you have rice already cooked, this is an excellent way to make a new meal or side dish from it. Sometimes I skip the baking step. It's a Thanksgiving recipe from BHG and is a wonderful vegan dish to bring to holiday meals.


Zucchini Noodles with Pesto and Roasted Tomatoes



This dish from A House in the Hills is another one that I make a variation of, and I should take the final step of adding the roasted tomatoes. Zucchini noodles are a great way to enjoy the feel of pasta when one can't eat pasta, and pesto is always a treat!


Stuffed Zucchini


This recipe is on my list that I want to try. It's from Clean Eating Mag and includes things like breadcrumbs, but I think the idea would be great with rice instead. We love grilled and roasted zucchini, so stuffing it with something yummy sounds delicious!


Szechuan Eggplant


Oh, this looks so yummy! I adore eggplant! I had it on my list to buy at the store, but the eggplant all looked terrible, so I had to put it off. This recipe is from Edible Garden and I can't wait to try it. I plan to serve it with rice noodles.

So there you go, a few ideas for great meals that aren't too complicated, nor expensive, and certainly very good for your tastebuds and your tummy!

7 Things

Dear Blog,

It makes me sad how much you have been neglected lately. I could make a lot of excuses to try to make you feel better, but it all boils down to only being able to do so much. Some days my focus is just making it to bedtime without any major meltdowns!

Here's some of what's been on my mind lately, from the trivial to the life-changing.

1. Do you ever see an image in a magazine or on Pinterest and it just makes your heart stop?!


This dining room did it to me yesterday. I saw it first on Pinterest and could only track it as far as this web site (where it's been pinned almost 1000 times). Anyone know where the original image comes from? To me it's the perfect blend of rustic farmhouse modern industrial timeless kid-friendly neutral yet so stylish.

I thought, after staring at the picture, that I just had to share the inspiration. It's certainly what I'd like to have in my own house. A rustic table, a bench, metal chairs and lights, built-in shelving for fancy dishes and cookbooks and pretties.

In fact, I wrote a whole post about it, complete with many more pictures and sources and links...

And 90% of it got eaten by cyberspace. Poof! There went my evening of blogging...

I just didn't have the energy to recreate that post, so I didn't. My blog isn't really a decor blog anyway. I'm trying to remember that and be ok with it, and use it more as a family scrapbook, but sometimes it's easier to just browse Pinterest.

2. Which brings me to point number two, in which I promise to only be vague and confusing, at best, as I muddle through what I've been feeling lately. There's so much background to where these thoughts are coming from, but basically I don't like who I am when I spend too much time on Pinterest. I get jealous. I whine in my head, It's not fair! Why does she get a beautiful fill-in-the-blank?

It steals my joy.

You've heard that saying, right? It's so true. There's more to the story, like I said earlier, but one thing I'm doing about it isn't spending less time on Pinterest, but purposefully editing what I see on Pinterest to be more uplifting. Not just feel-good stuff, but more I-could-do-that DIY stuff, life hacks, homeschool inspiration, modest dress, healthy food, Christian morals, living with less, you know.

Because anyone could compare their life with masses of others and come out feeling empty-handed. You know what? It works the other way around too. As in, think of all of my amazing blessings instead of focusing on what I don't have. I mean, duh, I know this, but the action from my latest bout of self-induced malcontent is to actively change what I see on Pinterest.

I'm editing my boards. Following different pinners. Doing new searches. It's going to take some time to kill the jealousy-inducing monster, but I know I'm using the right sword.

3. Grandpa has cancer. Their Grandpa, my husband's Dad, my Father-In-Law. He's losing his hair, no thanks to chemo. Gary and our boys shaved their heads, even though Grandpa lives in a different state. In solidarity.


Aren't they beautiful? And what a precious thing to do for their Grandpa. Please keep Grandpa in your prayers.

4. Only in part due to Grandpa's diagnosis, Gary and I have made the very difficult decision to withdraw from our mission to the British Isles. I know it's been awhile since you've heard an update. I've really been sporadic about posting or even knowing what to post. I keep hoping I'll find my blogging groove eventually, but for whatever it's worth and for the family record, we have officially stopped fundraising and have quit working with the wonderful organization that was sending us.

I could ramble a good bit about different things that made up our minds, but the most convincing argument is this. Our mission was donor based. We were not getting donors. We're still not sure why, but after a year of active fundraising in which most candidates get 70-100% of the needed funds, we were at 11%. I'm sure there are lots of factors, but our emotional energy was spent and we feel the door was firmly shut.

That decision has been brewing for a couple months and Grandpa's diagnosis just emphasized to us that we need to be closer and more available to family, even if we're still quite far geographically. We'd love to travel, love to share Jesus with people who don't know, but we also need to be more available in times of need.

What I expected when we officially withdrew was relief. This year of trying to get other people interested in our mission has been very taxing on us, always feeling we should be trying harder, we should be reaching out more, we should be should be should be... We were trying to figure out why we weren't getting support, and we still are, but officially quitting should have been a relief!

I didn't expect the mourning.

I didn't expect to feel like a failure.

Between Grandpa's diagnosis and our mission ending before it even began, July was a pretty dark month. You know? No energy. Crying. Struggling with meaning and happiness and what it means to be happy and what to do to get that. Thinking we had been divinely lead one way, only to have the door firmly shut and locked, then sickness to become such a real part of life...

5. We're not depressed and we haven't given up on life. We know there's more to it than that. We were never promised unicorns and rainbows, just joy after sorrow. Beauty for our ashes.

I don't want to turn this into a list of all I have to be thankful for (so much), nor do I just want to throw a Plan B out there and we all do the golf clap and fake smile and pats on the backs and everything will be ok. It's not ok. But it's what we have, and God never fails.

Gary is enrolled in classes starting this month at the college we happen to live a block away from. He's finishing a degree he started years ago, in Theology. We'll see where this road takes us!

6. Meanwhile down the road in a very adequate though not ideal rental home in a neighborhood we don't want to stay in any longer than we have to, I'll be homeschooling our little trio. I'm sure I'll be posting more about them this fall as we kick it into high gear. I firmly believe children are constantly learning, whether or not they are actively given opportunities. But I'm also an educator by training and background, so the fall is when I naturally just want to kick it up a notch!

We'll be learning with My Father's World, supplemented by whatever floats our boat, whatever projects I see on Pinterest, whatever almost-free supplies I see at the dollar spot at Target. (Seriously, they have so much good stuff there right now!!!) I'm excited about the possibilities, excited to figure out what works for us and what motivates each of my learners.

7. One thing we've chosen is to babysit less. It just didn't work with homeschooling last year. Maybe the right combinations of kids, maybe a more predictable schedule, maybe a less transient stage of life. But for now we've chosen to cut back. It'll mean fewer stops at Target for those dollar supplies that really add up, fewer evenings at a restaurant to give a stressed-out mommy a break but spending half of the grocery budget on one meal.

But to be able to focus my attention and my energy on my own kids! To be able to shape our days based on what we need to do, not on who's going to be at our house, to have more control over what influence is in our home--HUGE deal!

I need to link my future self to this post. I know I will need to re-read this when I'm tired of feeling trapped by the budget again. I'll need a reminder of why we chose this. I know it'll be another hard year ahead.

It's empowering to think of it as a choice though, isn't it?

Well, I'm tapped. I was going to make this a 10-things post, but I'm done.

Pin-Tested

Who loves Pinterest? I do! I do!

I wanted to try something, kindof a for-the-record type post about pins I've actually tried. Some I love and continue to use, others fuel the creative fires, and still others are ... not what I was looking for. Or I failed at the execution of the directions. Whatever.




I did this artsy craft right after Josiah was born. I used shades of blue scrapbook paper and it's been on display ever since. Love it!




I got out all the supplies to do this name craft with my boys. Then I started taping. You know how hard it is to spell JONATHAN with tape? yeah, I quit and just let them paint!



I don't have different quiet time bins, but I've started giving my two older boys a certain toy for their rest time. Lately Jared has been happy playing with a bag of marbles while Jonathan is learning to follow the instruction booklet with his Legos. It keeps them happy and quiet which makes Mommy happy too!




This is Miss Mustard Seed's kitchen with a chalkboard wall. Did it. Love it. Recommend it.



If you read Friday's Instagram post, you saw that I made shorts for my boys using this technique. They hadn't outgrown the jeans but they all had holes in the knees. It worked great! I also used the same technique to shorten a pair of jeans for myself. I think I like it--at least the jeans are wearable, but I've had some issues with fraying and with the hem folding up. Hopefully a good wash or two will fix that.



This one. Oh dear. Not sure if it was me or if this is the worst idea in the history of ever. I kinda ruined my muffin tin! I mean, I soaked it for a couple days, scrubbing one little hole at a time... Baked egg is like concrete. Use lots of oil spray and don't overcook your eggs! Unless you're cooking for a crowd, just fry the eggs in a skillet. You can fit like 3 at a time! These eggs cook for 20 minutes, then you have to scrub the tin for three days. How does that save you time?




I love this soup! I've made it at least six times and each time it's perfection! You have to use the mindset that coconut oil (from the milk) is good for you and only eat this sometimes, but MAN is it good! I've tried both green and red curry paste and both are amazing. Try it!




Ok, so this girl is totally a hottie and is posed all fancy-pants, but she gives a clear reason why not to use shampoo and what to do instead. Broken down, examples, variations, etc. Well done. I'm on day 4, determined to see it through at least two weeks. The jury is still out on whether "no-poo" is right for me. Have you tried it?



Speaking of natural remedies, Wellness Mama is the motherload of DIY, natural, homemade everything. I tried her oil cleansing and while my skin was nice, my hair got oil in it. Now I use a mix of baking soda and coconut oil with a drop of peppermint essential oil to scrub my face. I love it!!! It's the perfect consistency and my face is so happy! I add a tiny dab more coconut oil to my face after my shower, especially around my eyes. It takes some getting used to adding oil to your face, but my face is clearer and than it's been in a long time. Coconut oil is also great for removing make-up.




And now to leave you in the gutter... I mean, toilet... I tried cleaning toilets this way. It helps. A lot. I still had to scrub, but some of that might have been residual from before we lived here. #shudder
